Exclusive Events for Devoted Food Enthusiasts
Michelin Guide Bangkok has announced the inaugural dinner of the Michelin Guide Dining Series, an exclusive quarterly event that brings together two renowned Michelin-starred chefs for a unique dining experience in the City of Angels. Each dinner will showcase the exceptional talents of the chefs, allowing them to share their individual personalities and culinary prowess with a new audience. But the events are not only a meeting of great talents. They also represent an opportunity to try one-of-a-kind creations that challenge the chefs, pushing them beyond the boundaries of their usual repertoire.
Future events will see an international Michelin-star chef hosted by one of the seventeen starred chefs featured in the first edition of the Michelin Guide Bangkok. Select diners will have the chance to sample stellar cuisine from around the world paired with the exquisite cooking of local favorites.
Two extraordinary chefs for the first edition
For this inaugural dinner in the Michelin Guide Dining Series however, two of Bangkok's renowned Michelin chefs will cook side by side for the first time. Chef Ryuki Kawasaki of Mezzaluna perched high atop State Tower won two Michelin stars for his exacting rendition of French cuisine executed with the finest ingredients, including those sourced from his native Japan. French Chef Arnaud Dunand-Sauthier earned two stars for Le Normandie, the Mandarin Oriental Bangkok's flagship restaurant that celebrates its 60th anniversary this year. Chef Arnaud will open his elegant, intimate dining room for the first night of the event, while Chef Ryuki will host the second night in front of his open kitchen and the plunging views of Mezzaluna over Bangkok and the Chao Phraya.
A culinary challenge
The challenge they have set for themselves is add a Thai note to their classically structured French cuisines, paying homage to their host country. “We're going to work with French techniques while introducing a few Thai elements,” explains Chef Arnaud. “Without falling into the clichés of fusion cuisine,” he hastens to add.
“For example I am going to make a cured and smoked salmon on a bed of curry where the chilis have been replaced by green bell peppers, but in a curry paste that has Thai tastes,” say Chef Arnaud. Chef Ryuki will make gaeng jued, the flavorful clear consommé that will accompany his foie gras custard with jasmine and wild rice crisps. He is quick to acknowledge the role of his staff in developing the menu. “I learned the recipe from the Thai cooks in my kitchen,” he says proudly.
Meet the chefs in an exclusive interview
Ahead of the event, Chef Arnaud and chef Ryuki met to discuss their approach to cooking and forging a culinary identity with the Michelin Guide Bangkok editorial team. Stay tuned to hear what the two chefs had to say about each other and their friendship (content live on March 19).
