Then it’s through to the aptly named ‘Sail Room’ for the main event, though you may be taken to other areas of the building for some courses. We work with a 100-mile radius dogma combined with a seasonal approach, meaning that we primarily use ingredients that are naturally available within our local environment at a given time, and we encourage takeback systems for transportation packaging. This minimises transportation emissions and supports local foragers and suppliers, stimulating local eco systems and innovation in locally produced ingredients.
