Start off with an aperitif at the marble counter, then meet the chefs in the kitchen on your way to the dining area, divided into sections, all of which exude a certain Scandinavian elegance. Having long worked with Sergio Herman, Orlando David has developed a vibrant style of cooking. He might, for example, serve herring on top of a potato and apple salad, accompanied by citrus gel, sea banana and pickled shallot.
