This trendy establishment housed in a former Greek theatre in the picturesque old town of Urla is all about sustainability. Respect for the environment is evident in every detail, from the wild-foraged ingredients used to the water conservation and waste management measures in place. The restaurant's freshly pressed olive oil is a highlight of its modern cuisine, which is full of personality. Acidity and spiciness are used to bring life to the dishes, as seen in a salad of wild herbs, berries, and a vinaigrette made from fermented beans and pollen. "We are a circular, sustainable local brand inspired by Urla's largest sustainable agriculture oasis and biodiversity guardian, Hiç Olive Forest. Our forest absorbs 19.5 tons of carbon annually through our 60,000 olive trees and wild edible vegetation, which we bring to Hiç Lokanta. Our restaurant produces 0.7 tonnes of food waste annually. Our forest, where we produce agricultural production with 100% green energy, is a national park that acts as a lung for the entire region."
