The inclusion in the set menus (Tempo, Alma and Fran Martínez's Gran Menú) of all kinds of fresh fish, even discarded fish (supplied daily by the fish market in La Vila Joiosa), and the option to add a wine pairing selected by Cristina, who also acts as sommelier and demonstrates extensive knowledge in this field, are all worthy of note.
