Nicolas and Solenne Conraux are the third generation at the head of this establishment, which has become a pioneer in the field of sustainable development and cookery. From the eco-friendly grounds to the staff’s organic cotton apparel, everything is geared towards wellness of mind and body. In the kitchen, Nicolas is as attentive to the Goulven coast, visible on the horizon, as he is to produce from the Brittany countryside. Oysters, lobster, pork, abalone, but also seaweed, vegetables and Brittany cheeses jostle for the leading roles in this star-studded cast of local delicacies. Almost every dish hovers between surf and turf. The bread (baked in the chef’s own bakery) is fiendishly delicious, as are the various Made in Brittany butters (seaweed, fleur de sel, etc). The wine cellar features an interesting selection produced by small, often organic, wineries.

We showcase our producers (fishermen, market gardeners, farmers) and our local artisans (plates made from salvaged wood, glasses made from abalone shells, linen and organic cotton uniforms) and we instruct our teams in eco-responsibility."
