Chef Michihiro Haruta studied in various countries and puts to work his experience in Northern Europe and the United States, while basing his dishes on French cuisine. We use sustainable seafood and avoid juvenile fish and endangered species in order to preserve marine resources. We source imperfect vegetables and have created a speciality with unused sake lees. Our use of solar salt and honey is also a part of our sustainability efforts.
