The dining rooms are rustic in design and complemented by a private room in what was once the chemist shop. The contemporary menu is hugely influenced by the traditional products of the area. "We source and make full use of natural products and are committed to sustainability. In addition, we have our own market garden, work with local producers, cook dishes using a wood-fired oven, and have a biomass stove that we feed with pine waste cleared from local pine groves."
