MICHELIN Guide’s Point Of View

The pupil of a great master, the chef here became a vegetarian after a gradual philosophical and spiritual transformation in Asia. After many years, his focus is now on natural food, which is avant-garde, experimental, skilfully prepared and beautifully presented. Full of flavour, the menu here is 80% vegan and gluten free.

The chef's commitment
My cuisine is good for the planet and for those who have the opportunity to savour it, ensuring that it is sustainable and in harmony with the soil. Our role is to absorb, implement and share this knowledge (including at the dining table!) in order to maintain this culinary balance. The vegetarian cookery competition which I have established and the books that I have published over the years are all part of this philosophy.
