It’s impossible to be glum at Jaleo, where Chef José Andrés's offers faithful odes to the cuisine of his native Spain. Unafraid of color and pattern, the interior flaunts such decorative accents as mounted bear trophies and convoluted art installations.
Cocktails are enticing, so sip on the magic mojito strained over cotton candy. The mood may be fun, but the food—from bocadillos to hearty plates—is seriously good. Some of the standouts are the simplest, like gambas al ajillo, or shrimp in a garlicky olive oil sauce. Don't miss the selection of Spanish charcuterie, in particular an ethereal 48-month cured jamón Ibérico de Bellota. If you're in a position to share, try the paella Valenciana with rabbit and chicken for a classic version of Spanish rice.
