“I really wanted to celebrate LOVE—I feel like when you’re in love, it’s like living in color,” says Mercer, who’s the chief mixologist of the property. “Everything is bright and alive, so I wanted the cocktail to communicate the vibrancy of love through colors. The cocktail is nuanced with the flavors of summer and the passionfruit really celebrates the passion and freedom of PRIDE.”
Ingredients
1 1/2 ounces Empress Indigo Gin
1 ounce lemon juice
1 ounce apple rosewater
1/2 ounce St. Germain Elderflower liqueur
1/2 ounce lemongrass syrup
Passion fruit pearls, for serving
Coconut/ginger blue foam, for serving
Unicorn lollipop, for serving
Method
1. Fill a cocktail shaker with ice; add all the cocktail ingredients and shake.
2. Fill a Collins glass with passion fruit pearls and fresh ice; strain cocktail over ice and top with foam and lollipop.
