Recipe: Butternut Squash Pizza

This recipe from Stella Barra makes the most of winter produce.

Stella Barra is a pizzeria with locations in cities across the United States. Here, they share a recipe highlighting some great winter produce: butternut squash. Stella Barra recommends slicing the vegetable with a mandolin to get it as thin as possible. The butternut squash is combined with candied bacon, three types of cheese, chiles, and herbs to top this pizza. And while Stella Barra makes their own pizza dough in house, store-bought dough also works with this recipe if you're making it at home.

Butternut Squash Pizza

¼ pound butternut squash, thinly sliced
¼ cup brown sugar, divided
¼ pound bacon
pizza dough, either store-bought or homemade
¼ cup mascarpone cheese
2 ounces Taleggio cheese, grated
2 ounces Gruyère cheese, grated
3 sprigs parsley, chopped
1 green onion, sliced
1 fresno chile, sliced

1. Preheat the oven to 350˚F.

2. Toss the butternut squash with half of the brown sugar; set aside to marinate.

3. Coat bacon with the remaining half of the brown sugar and lay on baking sheet lined with parchment paper. Bake in the oven until crispy, approximately 20 minutes.

4. Let the candied bacon cool and then chop into bits.

5. Preheat oven to 450˚F.

6. Stretch out the pizza dough and fit to a pizza stone or baking pan. Smear the mascarpone cheese evenly on the dough. Sprinkle the Taleggio and Gruyère cheeses, parsley, and green onion onto the pizza. Top with the marinated butternut squash, chopped candied bacon, and fresno chiles.

7. Bake until the crust is golden brown, 20 to 25 minutes. Slice and serve.
