Pure and honest. These two words encapsulate this vibrant place, though they hardly do it justice. Joyce and Victor's deep respect for the seasons and Dutch produce is truly inspiring. They work closely with their suppliers and encourage chef Josephien Blom to be creative within the framework of their sustainable values. The pig's trotters with a tangy remoulade sauce is a classic of the house, but she also gives potatoes a surprising twist with a seaweed sauce and crispy serrated wrack. Prepare to be amazed!
"We work closely with our suppliers: the farmer, the gardener, the wine supplier, the cattle breeder, the cheese maker, the fisherman. We start from what is available and in season from Dutch soil and waters. A part of our ingredients is homemade (in various ways). At Héron you see, feel, experience and taste that there are countless delicious things to be found in the area."
