MICHELIN Guide Shanghai 2019 Selection

Ultraviolet by Paul Pairet is the only restaurant lauded with three MICHELIN stars in the third edition of the guide.

A total of 34 restaurants are bestowed with stars in the selection of the MICHELIN Guide Shanghai 2019, up from 30 last year.

In this edition, innovative restaurant Ultraviolet by French chef Paul Pairet is the only restaurant that is lauded with the prestigious three-Michelin-stars status.

Eight restaurants receive the two-star accolade, which recognises restaurants with excellent cooking that are worth a detour. They are L’Atelier de Joel Robuchon, 8 ½ Otto e Mezzo Bombana, Imperial Treasure, Yi Long Court, T’ang Court, Yong Foo Elite, Canton 8 (Runan Street). Joining the list of two-starred restaurants for the first time is Xin Rong Ji (Nanyang Road) that serves Chinese and Shanghainese cuisine in a fine-dining setting.

25 other restaurants are recognised with one star, which stands for high quality cooking that is worth a visit. Five of them make their appearance on the list for the first time.

Three of the first-time one-starred restaurants flew the flag for Chinese cuisine. They include Moose, which serves creative Huaiyang cuisine and boasts signature dishes such as the Eight Treasures Gourd Duck that is stuffed with Chinese chestnut, pork, abalone, bamboo shoots, mushroom, ham, ginkgo and glutinous rice. The other two are contemporary Cantonese restaurant, Ji Pin Court, and Amazing Chinese Cuisine that offers Teochew dishes with a modern flair.

Adding clout to Shanghai’s reputation as a dining hub are two European restaurants that are each recognised with one Michelin star for the first time. They are Le Comptoir de Pierre Gagnaire, the Shanghai outpost of acclaimed French chef Pierre Gagnaire who has an eponymous three-Michelin-starred restaurant in Paris, and Il Ristorante - Niko Romito, which serves haute Italian cuisine.

The selection for the third edition of the guide was announced by Bruno De Feraudy, President of MICHELIN China in a ceremony attended by chefs, restaurateurs and journalists. 26 other dining establishments were recognised in the Bib Gourmand list.
