The chef rustles up traditional cuisine made with seasonal ingredients and remarkably fresh meats, such as locally hunted venison, cooked in a stew at a low temperature and accompanied by ceps and spaetzle. He does also cook more contemporary dishes, such as duck tataki served with sauerkraut salad.
