The owner-chef sprinkles Chinese tradition with Japanese and Western elements. The piping hot spring roll served with cold mala sauce sorbet offers an alternation of a hot/cold taste sensation and of textures. The spiciness of the shrimp chili sauce is moderated by the thickness of the poached egg. Chinese cuisine has developed by absorbing new elements, and in line with this history the owner-chef keeps its present evolution ever in mind.
