Live Update: 4 New Additions in the MICHELIN Guide Seoul - July 2022

Our inspectors highlight the four restaurants that have newly entered the MICHELIN Guide Seoul restaurant selection in July 2022.

Shortly after the launch of the MICHELIN Guide Seoul 2022 in November, our inspectors have been back on the road again in search for new addresses worthy of inclusion in the MICHELIN Guide selection.

While the MICHELIN Guide distinctions — Stars, Bib Gourmands, and Green Stars — will be revealed during the annual launch ceremony, our MICHELIN Guide inspectors have decided to share some fresh new restaurants that have caught their eyes (and palates) in the meantime, making them new additions to the next MICHELIN Guide Seoul selection.

Every second Monday of the month, the new restaurants that will be part of the upcoming MICHELIN Guide Seoul will be featured in both the MICHELIN Guide Seoul website and the global MICHELIN Guide mobile application.

How to identify the new restaurants? They will be highlighted with a "New" symbol. Some of these newly recommended establishments will go on to earn distinctions at the MICHELIN Star Revelation ceremony, so check them out and add them to your list of places to dine at!

Here are four of the MICHELIN inspectors' favourite new additions for July 2022 in Seoul!

Aelgerizm’s Japan-meets-West modern cuisine will delight your palate with delicate seasonable variations on a theme. The food is inspired by Chef Yang Min-woo’s rich culinary and life experience in Japan. He blurs the boundaries of his brand of Japanese cuisine through the inventive use of Western ingredients, always seeking to maintain the right balance to achieve culinary perfection. The menu changes four times a year, reflecting Korea’s four distinct seasons, with each seasonal menu organically related to the preceding one. Each dish brings out the genuine flavors of the ingredients, then delicately balanced with the sauces.

Chef Allen Suh has opened a restaurant named after him. The chef and his veteran culinary team create dishes, based on seasonal ingredients, that illustrate the beauty of Korea’s four seasons. His mastery in utilizing a wide variety of tableware for the art of plating adds visual delight to the restaurant’s delicate flavors. In particular, diverse amuse-bouches served on a wooden tray, such as a small pie topped with caviar and smoked sturgeon, beetroot hardened with gelatin, and flavorful horse mackerel aged with kelp, are amongst the gastronomic wonders that change seasonally. Ice cream made with 24 month-aged Parmigiano-Reggiano, blue cheese puree, and other scrumptious dishes are dinner-only specialties. Chef Suh’s new culinary venue is roomier than his previous one, has a wine bar, and offers a pasta menu. Be sure to check it out!

Ilpan

This eatery embodies art on a sizzling griddle heated to 130–180 °C. Run by Chef Kim Il-pan, Ilpan is a restaurant where cooking at precise temperatures meets visual delight, resulting in ultimate culinary pleasure. Using Korean, Japanese, and Western cooking techniques, the chef creates a multitude of menu items. Since every section of the counter has its own griddle, each diner can enjoy their meal at their own tempo. From the chef’s pre-dining introduction of ingredients to his cooking unfolding right in front of you, each step of the culinary process at Ilpan makes your gastronomic journey that much more adventurous.

At OPNNG, delight your taste buds with hard-to-find rare wines while relishing the overall vibe. The name symbolizes “the opening up of new taste vistas through gastronomy and wine.” Resembling more of a gallery than a wine bar or restaurant, this fine dining venue impresses patrons with an arch-shaped entrance, paintings by renowned artists, and a vast wine cellar that plays host to more than 500 different types of wine. It offers handmade pasta dishes and refined à la carte items as well as a simple course meal for lunch.
