The original and exciting dishes draw heavily on local organic produce and heritage vegetables. Diners are won over by thoroughly modern fare that has been devised with a genuine concern for sustainability, such as suckling lamb served with pak choi and rhubarb. "In our historic auberge, we think and act in a modern way but in a traditional spirit. We work seasonally with products from the Romandie and Vaud regions, our fish is from Lake Geneva, and we buy our organic vegetables, game and other meat direct. Regional wines."
