MICHELIN Guide’s Point Of View

Seafood from places like the Goto Islands and Akashi are the focus of the set menus here. The chef uses kobujime technique, smoking or marinating them in vinegar depending on the fish. The acidity of tomatoes and pickles gives a change of pace to the many items served in small portions to keep your taste buds guessing. Another characteristic is the use of kombu and dried sardines in the sauce for meat dishes like beef, duck and guinea fowl.
