The theatrically visible kitchen enables you to admire the precision of chef Alexandre Dionisio, whose food is characterised by first-class produce underscored by playful notes and subtle side dishes. Alexandre’s high-flying culinary wizardry leads him to try out bold combinations such as a silky béarnaise sauce underscored with the subtle, savoury taste of oyster leaf (mertensia maritima) and paired with a succulent veal cutlet from Corrèze. The chef also cleverly blends delicate Asian influences into text-book classical recipes. His creative elegance more than confirms that he is worthy of his star-studded reputation.
