Winning your first Michelin Star is the stuff that dreams are made of. On the 5th February 2024, those dreams came true for Joshua and Victoria Overington, as their restaurant, mýse, was awarded One Star at The MICHELIN Guide Ceremony. It was the culmination of a journey that began many years ago for the pair, who previously ran the now-closed Le Cochon Aveugle in York city centre. For mýse, they moved out of the city to the nearby village of Hovingham, where they converted a former pub into a restaurant which Joshua describes as offering "relaxed luxury".
In this video, Joshua explains the secrets of mýse's success and the ethos behind his cooking. Unsurprisingly, British produce plays a huge role in the operation, with dishes designed to show off delicious yet often underappreciated ingredients from the local area. Seeing Joshua and his fellow chefs at work is a joy to behold, making this behind the scenes look at a Michelin Star kitchen all the more enticing.
