Hiroyasu Kawate uses ingredients from producers he has a relationship with. Investing these ingredients with his sensibilities, he produces one-of-a-kind dishes. He brings out each dish to the table himself and explains it enthusiastically. Talking about past experiences involving the dishes is part of the recipe, and he weaves a story into the dishes as they’re created in the theatre-like open kitchen. The speciality is beef from cows that have calved.

Food sustainability is a goal we are working towards, with the focus on food loss. Our signature dish, ‘Sustainability, Beef’, uses beef from cows that have had at least one calf, and seeks to fuse sustainability and gastronomy. We create new value with dishes using ingredients that would otherwise be thrown away.
