On the menu, premium produce from the province is deftly prepared by Fujian natives for the most authentic experience possible. Try the signature Shuizhu seafood trio – live prawns, razor clams and giant red squid are blanched in a mild mala broth over a bed of pickled broccoli stems, cucumber and bean sprouts for crunch and tartness.
