A new restaurant in Pinheiros that stands out from the crowd and has impressed local Paulistas with its cuisine. Its Latin name pays homage to agriculture-related religious festivals held during Roman times, and this is exactly what chef Mario Panezo is looking to showcase here alongside his friend Pedro Bresser. Their philosophy champions seasonally inspired organic ingredients sourced from small-scale producers, with a focus on the maximum usage of the produce used, and a reduction in the use of plastic in accordance with sustainable practices that influence the flavour of their dishes. The open grill is the main cooking technique used in a number of dishes such as the grilled leeks served on a bed of romesco sauce and quark cheese, which is an excellent choice as a starter. The organic cooking here is complemented by a selection of natural wines that are in perfect harmony with the dining experience.
