He crafts flavoursome seasonal nosh that celebrates Gallic culinary traditions. Good country cooking with the odd more contemporary touch: salmon gravlax, dill, beetroot and wasabi; chicken breast, roast apricot, polenta fries and rosemary-flavoured poultry gravy.
