The Eight
Three MICHELIN Stars, MICHELIN Guide Hong Kong Macau 2022If luck is what you’re after in the new year, make your way to The Eight. The nine-time Three MICHELIN-Star awarded Chinese restaurant offers a multisensory experience fit for any epicurean. The restaurant's classic menus, impeccable dim sum selection and phenomenal wine cellar with over 17,000 labels are enough reasons to treat yourself and your loved ones this Chinese New Year.
To receive the Year of the Tiger in style, The Eight has specially curated a festive dinner menu with an array of Chinese New Year specialties, including assorted suckling pig, marinated jelly fish platter, sautéed fresh abalone with sea cucumber and dried conpoy, braised dried oyster and pig’s tongue with conpoy and sea moss and more.
Those who opt for lunch are treated to a special selection of dim sum items such as deep-fried prawn dumplings with Italian black vinegar and Japanese ginger, and steamed shrimp dumplings with bitter melon.
Lai Heen
One MICHELIN Star, MICHELIN Guide Hong Kong Macau 2022What better way to welcome the new year than at one-MICHELIN-starred Lai Heen, perched on the 51st floor of The Ritz-Carlton, Macau? Apart from a Chinese New Year menu of dim sum that includes sweetened glutinous rice balls with 10-year-aged tangerine peel, chef Jackie has prepared delectable New Year lunch and dinner set menus that are not to be missed.
From now until February 9, the 6-course “Prosperity Lunch Set” includes favourites such as steamed abalone dumplings and double-boiled free-range chicken soup with yellow mushroom and conpoy. The sumptuous dinner menu is an 8-course experience filled with auspicious dishes such as pan-fried lotus root cake with caviar, double-boiled fish maw soup, or braised whole abalone with foie gras and morel mushroom.
Pearl Dragon
One MICHELIN Star, MICHELIN Guide Hong Kong Macau 2022Pearl Dragon presents us with "The Lucky 8", a series of refined delicacies featuring a selection of exquisite seafood. Dishes you can enjoy in this gorgeous Cantonese restaurant include baked American lobster with e-fu noodles and crab roe sauce, braised abalone with fish maw, sea cucumber, mushrooms and goose webs, or “Lo Hei” prosperity tossed salad with geoduck clam, shredded vegetables and yuzu sauce.
Ying
One MICHELIN Star, MICHELIN Guide Hong Kong Macau 2022This Chinese New Year season, MICHELIN-starred restaurant Ying is treating us with beautiful auspicious Chinese New Year dishes in four different menus. The "Superior Poon Choi Menu" features a traditional Cantonese family-size poon choi reinvented with the introduction of exquisite ingredients such as abalone in oyster sauce, fish maw in chicken broth or sea cucumber with shrimp roe. The "Lucky Dim Sum Menu" is elevated with exquisite seafood, including dumplings stuffed with steamed abalone and pork or sea urchin and sea cucumber.
Two options of a 12-course Spring Dinner Set Menu are available for 6 or 12 people groups. Extravagant specialties to enjoy include “Prosperity Toss” with abalone, jellyfish and deep-fried taro, braised lobster and chicken with ginger and spring onion in clay-pot, or braised goose web with fish maw in abalone sauce, to name a few. To say farewell to the year of the Ox and welcome the year of the Tiger, Ying has also created a 9-course "Reunion Set Menu". The menu features some of the restaurant's most sought-after signature dishes and can be enjoyed until January 31.
Jade Dragon

If you're looking for a memorable fine dining experience to welcome the year of the Tiger, Jade Dragon will not disappoint.
From now until February 15, enjoy mouth-watering delicacies including crispy shrimp paste dumplings with Iberico pork and foie gras, stir-fried turnip and taro cake in Jade Dragon homemade X.O sauce, or baked abalone and sea conch tartlets. The "Lunar New Year Specialties Menu" includes incredible dishes such as tossed Australian abalone, Hokkaido sea cucumber, sweet pickles with homemade plum sauce, crispy wild yellow croaker roll with truffle, steamed wild yellow croaker with chicken oil and Chinese aged "Hua Diao" wine sauce or braised bean curd with Brittany lobster in Sichuan style. Finally, the "Chinese New Year Set Menu" is an 8-course journey through Jade Dragon creations with a perfect wine pairing option.
