Une étoile : une cuisine d’une grande finesse
In one of the oldest buildings in the country, in the fully pedestrianised centre, chef Uroš Štefelin and his team welcome guests with genuine spontaneity. The gastronomic proposal is structured around three tasting menus – of five, seven, or nine courses – selectable at the time of booking. Regardless of the number of dishes, the journey celebrates local produce and recipes reinterpreted with contemporary sensitivity. Preparations such as krapci, ravioli filled with chestnuts and porcini, or sweetbreads, deftly served with finely cut vegetables, are but a few expressions of local tradition. In the surrounding area, it is well worth seeking out the typical local porcelain in one of the small boutiques nearby, or the celebrated local chocolate, which also takes centre stage at an annual festival.
"The restaurant works with local farmers to rediscover forgotten dishes and ingredients and develop new traditional products. They jointly plan crops, complementing those from their own gardens and greenhouses. The project also involves individuals with special needs, who create ceramics and paintings and are part of the team, working in the kitchen too. Guests arriving by bike or public transport are rewarded, promoting sustainable mobility."
