Few chefs could bring together the flavours of French and Japanese cuisine more distinctively than Christian Bau. Elements of both styles can be found in his "Paris-Tokyo" set menu, a fine example being his mackerel with caviar, buttermilk, yuzu kosho and chives, served on an elaborate Japanese waffle.
