"Simplicity is the peak of elegance" seems a fitting adage to describe this stunning kaiseki counter. In Japanese, "tsukimi" means moon viewing (a mid-autumn harvest festival honoring the moon at its fullest and brightest); and following the moniker quite literally is a central motif of the moon. Illuminated shelves of ceramics, light wood walls, marble tube lights, and gleaming mirrored panels also work to reinforce the room's light-bright aesthetic. Service is seamless, unaffected, and goes a long way towards enhancing the exquisite dining experience to be had here.

The progression of the these whimsical and deeply seasonal courses is strategic, imaginative, and versatile. To start, a wee cup of chilled caviar is served with warm scrambled eggs, potato purée, and Hokkaido uni; while chopped scallop is matched with sea buckthorn sauce and laid atop a nori crisp for perfect crunch. Diners may then expect anything from spring in a bowl by way of steamed white asparagus with black truffle and Hollandaise, to thick yogurt finished with a drizzle of golden olive oil.

Beverage pairing is available, but stick to à la carte for a great selection of sake, including a few aged varietals.
