A young, enthusiastic and professional couple has taken over the reins at this modern and welcoming restaurant, serving cuisine that is inspired by a sustainable and seasonal approach. Ingredients include herbs harvested from their own garden, as well as typical produce from the mountains and the sea, all sourced from trusted suppliers who demonstrate full respect for nature and animals. Food waste is kept to a minimum to ensure a circular-based cuisine.

"Sara and Mirko’s strong commitment to the environment revolves around certain key features. Firstly, there’s a focus on foraging for wild ingredients such as herbs, flowers, shoots, algae, lichens, mosses, berries and pine cones. And secondly, they also produce fermented ingredients (garum, miso, vinegars, shoyu and katsuobushi) from food waste and flame-cook all their dishes. All the furniture in the restaurant has been made from recycled materials."
