A young and passionate professional couple has taken the helm of this modern and welcoming establishment, offering a gastronomic line inspired by sustainability, seasonality, herbs harvested directly by them, and ingredients from the mountains but also from the sea, as long as they come from trusted producers who respect nature and animals. On some Sundays, foraging in the surrounding woods is offered, ending with a lunch where the harvested herbs are used.
"Sara and Mirko’s strong commitment to the environment revolves around certain key features. Firstly, there’s a focus on foraging for wild ingredients such as herbs, flowers, shoots, algae, lichens, mosses, berries and pine cones. And secondly, they also produce fermented ingredients (garum, miso, vinegars, shoyu and katsuobushi) from food waste and flame-cook all their dishes. All the furniture in the restaurant has been made from recycled materials."
