Una Estrella : una cocina de gran nivel
Nobuharu Yamamura worked for many years as head chef at an established ryotei. He picks flowering herbs and arranges them or places them on the serving dishes to present the food on. The highlights are the tsukuri served in a bowl of ice and the hassun, which features plenty of shuko. You can choose from several kinds of rice at dinner, and second helpings are topped with chirimen sansho. The hospitality provided by Yamamura and his wife is heart-warming.
