This restaurant in one of Milan’s historic districts is home to the chef who first introduced the concept of natural, vegetarian cuisine to the world of Italian fine dining. Pietro Leemann is the man (and great philosopher) behind this “vegetarian restaurant” where the menu is 80% vegan and gluten free. This chef’s imaginative and dream-like dishes bear witness to the philosophical and spiritual transformation he has undergone over many years, with recipes that showcase the essence of their ingredients in colour, flavour, texture and presentation. The restaurant is minimalist and elegant in style, while its Joia Academy aims to introduce participants to all aspects of the chef’s philosophy.
"Pietro Leeman has made his vision the guiding light for sustainable gastronomy, where the planet and its inhabitants work together in harmony. It may sound more like philosophy than gastronomy, but his vegetarian approach to cooking has practical results, such as the use of raw materials from micro-producers never located too far from Milan. Pietro's cultural contribution to the environment can also be seen in the creation of beautiful themed books."

Es un término amplio que cada uno interpreta a su manera, de ahí que cada restaurante con Estrella Verde MICHELIN tenga su propia filosofía. Estos diferentes enfoques de la gastronomía consciente quedan patentes en las respuestas que nos han dado cinco cocineros, todos con este galardón, a los que hemos hecho la misma pregunta: “¿el veganismo es sostenible?”.
