MICHELIN Guide’s Point Of View

Ren means ‘lotus’ and it is in the purity of spirit associated with that flower that the head chef approaches his cooking. The most memorable highlight is the quality seasonal chargrilled items, such as bamboo shoots, hamo, matsutake and fugu shirako. The lily bulb, broad bean, lotus root and other manju are seasonal delights. Masterful technique is hidden within the sometimes meticulous preparations.
