The chef's commitment
We cooperate with producers in order to increase the amount of sustainable ingredients available. Out of consideration for marine resource depletion, we use fish caught using a fishing rod. We procure organic vegetables, which do not burden the environment, and beef and chicken raised without the use of chemical-containing feed.
