The setting for this excellent ‘Gallery of Flavours’ is particularly impressive: a park with an 18th-century Baroque palace, once the castle of Novo Celje, standing in the centre. The welcoming fine dining room and, more importantly, the culinary offerings, always based on local ingredients, prepared and presented with skill and imagination, are definitely more contemporary. The choice is between a concise à la carte menu and a seven-course tasting menu, which can be reduced to five courses. With over 600 labels, the wine cellar is one of the most extraordinary in Slovenia.
"The property and staff adopt a mindful approach to sustainability: ingredients within a 50 km radius, often at 0 km thanks to a recently expanded vegetable garden, tap water only, and meticulous attention to waste reduction. In recent months, they have enhanced fermentation techniques, introduced sustainable packaging, integrated foraged ingredients into the menu, and enriched the guest experience with more information on sustainability."
