MICHELIN Guide’s Point Of View

Come to this L-shaped counter, framed by soft leather stools, to experience a unique style of Japanese dining called “kappo,” which basically leaves your meal entirely to the chef’s discretion. It may be less refined than the traditional kaiseki, but diners will soon forget about that as they begin to taste these ambitious compilations. A dedication to seasonal ingredients sourced locally (as well as from Japan) makes this style of cooking truly distinct.

Sashimi courses may progress from bluefin tuna in sweet miso and mustard dressing, to rich winter yellowtail with grated purple daikon and yuzu juice. That last fish may then return—koji-marinated, grilled, and set over braised chrysanthemum greens—for a delectable finish.
