He honed his skills at his mother’s restaurant, so the Hunanese chef is passionate about his home-town cooking. Ingredients such as chillies and smoked pork are sourced directly from farmers in Hunan. The speciality braised pork elbow entails four complicated cooking steps spanning over 10 hours to develop layered flavours and the right texture. Stir-fried pork with Youxian beancurd and spicy organic cauliflower are also worth trying.
