The MICHELIN Guide to Dining in Colorado's Beaver Creek

There's something special about these three spots in the scenic mountain town.

With its charming alpine village and scenic mountains, Beaver Creek is a world-class destination. In the winter, it's a skier's paradise with perfectly groomed trails suited to all skill levels, and when the days are long and wildflowers dot the hillsides, Beaver Creek appeals to hikers, bikers and other adventurers. 

While Beaver Creek isn't defined by one season, it's also far from single-minded. It's not just about the great outdoors here, where exceptional indoor adventures of the culinary sort may be experienced around town.

Mirabelle

This charming spot is a beloved part of the local culinary scene. Situated just past the entrance to the Beaver Creek Resort, in a picturesque turn-of-the-century ranch house (built by homesteaders in 1898), Mirabelle is also the residence of longtime Chef Daniel Joly and his family, which helps to explain its homey, inviting charm.

Chef Joly, who trained in Europe at several MICHELIN-Starred restaurants before moving to Colorado in the 90s, delivers a roster of comforting classics. Portions are generous, but saving room for dessert should be considered non-negotiable, considering such offerings as a delicate, panna cotta-like roasted apricot posset with hazelnut crumble and rosemary tuile.

Inspector's Tip:

"Your server will encourage an order of the Belgian frites, and so do we. Served in a small copper pot, the golden-brown tangle of hand-cut French fries is served with a side of tangy house-made mayonnaise with a strong note of Dijon mustard. The creamy interiors and rich potato flavor--are two reasons why these are so popular."

Splendido at the Chateau

Set above Beaver Creek village on a sprawling property, Splendido at the Chateau more than lives up to its name. The setting is at once grand and comfortable, evoking a sense of special occasion without the fuss. Inside, warm woods create an upscale, lodge-like feel, and the warm, attentive service is sure to make you feel like royalty.

Looking beyond the glamorous environs, you'll find a thoughtful menu overseen by longtime chef Brian Ackerman, which straddles the line between creative and classic, seen in a pomegranate-marinated rack of Colorado lamb. Dover sole, pan-seared before being adroitly filleted tableside and served with brown butter beurre blanc, is a menu staple for good reason. End with an airy soufflé, or opt for something a bit more nostalgic, like a chocolate and peanut butter pave.

"The wine list has plenty of depth, with some surprising, reasonably priced finds."

WYLD

Ski-in, ski-out access to Beaver Creek is one reason to stay at The Ritz-Carlton, Bachelor Gulch, where timber-and-stone exteriors echo of national park lodges, and the interiors are filled with a blend of classic luxury and contemporary style. WYLD is yet another. 

The name is a bit of a misnomer, as this sophisticated spot is far from wild. In fact, it's the very picture of rustic refinement, right down to the large windows framing postcard-perfect views of Beaver Creek. Settle into this laid-back luxe spot and share stories of the day's alpine adventures over likeable, contemporary dishes.  

Inspector's Tip:

"Heartier entrees, like chicken under a brick with roasted carrots, parsnips and celery root puree, are especially satisfying after epic days filled with skiing or hiking."
