Chef Hiroshi Kawashima’s stock-in-trade consists of the blessings of Nara and the commitment of its food producers. As he explains the background to his ingredients and their producing regions, he conveys the significance of dining in this region. Kawashima’s freedom of imagination and technique are inspired by modern Spanish cuisine.
