In a charming customs house dating back to 1786 – the façade bears the image of St Verena – Dave Wälti presents contemporary cuisine that celebrates regional ingredients. Intense flavours and harmonious contrasts are artfully combined in pared-down dishes – such as tiradito of ultra-fresh Lostallo salmon, served with a bold leche de tigre with balanced acidity and a spicy kick, along with a mild aji amarillo chilli purée and a nutty, aromatic quinoa crunch. Order à la carte or take a punt on the surprise menu, which comes in four- to six-course variants. Handsome details such as wooden floorboards, wood-panelled walls, bare wooden tables and a lovingly restored coffered ceiling create an inviting setting in which warm timber meets contemporary design.
