But the updated Huaiyang and Nanjing delicacies, deftly crafted by the experienced head chef, are the key to its allure. The crystal pork aspic boasts meaty flavour and a bouncy texture, and vinegar pearls provide mini explosions of tartness. The thinly shredded tofu in the umami-laden Wensi tofu soup with crabmeat is testament to impressive knife skills.
