This restaurant with an elegant Castilian air is run by two brothers who focus on traditional cuisine which they reinterpret to offer their guests a different take on time-honoured recipes. Roast lamb and suckling pig are the undoubted stars on the menu here, accompanied by other traditional dishes from the “Meseta”; The cuisine is striking for its lightness of touch yet intense flavours thanks to the century-old wood-fired oven that is still in operation. Make sure you try their “torreznos” (a kind of fried bacon snack), which are roasted in the oven and then fried in extra-virgin olive oil.
