It is an 11-minute drive from the highway to Mearkas. The short journey through the stunning Frisian countryside serves as a prelude to the sense of tranquillity that awaits you in this glass-walled restaurant flooded with light. The surrounding vegetable gardens, fields, and glamping tents form the backdrop to this ode to Friesland. Chef Kees and gardener Christiaan have joined forces to showcase the finest local produce. Everything is either homegrown or sourced from nearby suppliers. In his set menu, the chef skillfully marries the hearty flavours of Friesland with a touch of sophistication, in dishes characterised by vitality and freshness. Think North Sea sole, delicately marinated in lemon, enhanced with local bacon and expressive garnishes of sour cream, fennel, lemon, puffed quinoa and paprika sorbet. A digestif by the campfire makes for the perfect ending to a uniquely serene experience.

"Most of our restaurant was constructed using recycled materials. It's located on a 2h plot that includes a small food forest – the rest is dedicated to biodiversity. The harvest from our kitchen garden reflects the seasons and is supplemented by produce from local farmers. We strive for a healthy balance between animal and plant-based ingredients. We are keen to share our vision with young chefs, and do this through workshops and demos, so that together we can build a sustainable future."
