A Hug in a Box: Chef Florian Stein’s Nostalgic French Creation with Standing Spaghetti at La Maison 1888

Go beyond the plate and into the mind of the chef. Here’s the story behind that signature dish at a MICHELIN-Starred restaurant in Da Nang.

Step inside the One MICHELIN Starred La Maison 1888 at InterContinental Danang Sun Peninsula Resort, where executive chef Florian Stein brings to life the French culinary philosophy of Chef Christian Le Squer of Le Cinq, the Three MICHELIN-Starred restaurant in Paris, with a modern, refined touch.

One standout that keeps diners coming back — and never leaves the menu — is the Spaghetti Debout, or “standing spaghetti.” Part comfort food, part showstopper, the pasta is slow-cooked like risotto in a rich porcini broth, then molded into a neat rectangular timbale. It’s filled with a luxurious mix of seasonal morel mushrooms, black truffle, and truffle cream, topped with French Comté cheese for an irresistible crunch.

For Chef Stein, this is more than just a signature dish at a fine dining set up — it’s a warm hug on a plate and a nostalgic nod to childhood bowls of creamy pasta with ham and cheese, shared with his mother in Alsace. Here, it’s reimagined with finesse, heart and a whole lot of flavor — fine storytelling, one nostalgic bite at a time.
