The restaurant of Dominique Bouchet, veteran of the Paris restaurant scene. Bouchet’s stellar career informs an approach he calls ‘tradition with progress’. Time-honoured French gastronomy combines with modern sensibilities in dishes prepared with a light touch. Platters combining French and Japanese ingredients are a feast for the eyes. The interior resembles a French apartment; the illustrations on the ornamental plates pay homage to Edgar Degas’ depictions of dancing girls.
