Pure and honest. These two words encapsulate this vibrant place, though they hardly do it justice. Joyce and Victor's deep respect for the seasons and Dutch produce is truly inspiring. They work closely with their suppliers and encourage chef Josephien Blom to be creative within the framework of their sustainable values. The pig's trotters with a tangy remoulade sauce is a classic of the house, but she also gives potatoes a surprising twist with a seaweed sauce and crispy serrated wrack. Prepare to be amazed!
"We work closely with our suppliers: the farmer, the market gardener, the wine merchant, the livestock farmer, the cheesemaker, the fisherman. We rely on what is provided by the Dutch soil and waters and what is in season. Some of our ingredients are preserved in house (using various methods).
