From the atmosphere to the food, Gem Dining deserves your full attention. The dining room is decidedly hip (think high ceilings strung with lights, sleek furnishings and cement flooring) and the open kitchen is on view from just about every corner of the dining room and bar.
It's not just a clubhouse for the cool, though—this is a serious chef-driven kitchen. Chef Viet Nguyen and his team turn out creative dishes with a Southeast Asian bent. Some of the hits include kampachi crudo with beet-cured amberjack and compressed mango finished tableside with a yuzu-dashi broth. Laksa risotto blends the classic Italian dish with the flavors of the much-loved curried noodle soup. To finish, sticky toffee pudding arrives with a theatrical plume of liquid nitrogen vapor.
