MICHELIN Guide’s Point Of View

Following in the footsteps of his mentor, the owner-chef has introduced Japanese cuisine around the world. Respecting local cuisine and regional dashi as folk crafts, he promotes ‘modern folk crafts’. A prime example is the use of Nara nyumen in soup made with dried sardine dashi from the Setouchi area. The unexpected ideas like adding a seasonal touch to inari-zushi by mixing in seasonal ingredients are novel.
