MICHELIN Guide’s Point Of View

This restaurant was opened under joint management by a chef who worked in Ginza and Paris and a sommelier. The dishes follow the tradition of orthodox kaiseki. In spring and autumn, Naruto tai is served minced, bones steamed, head grilled and in ushiojiru. To end is rice cooked in an earthenware pot with wild-caught unagi kabayaki or seasonal takikomi-gohan. The pairing of wine or sake with each dish is novel for Japanese cuisine.
