MICHELIN Guide’s Point Of View

A vermilion lacquer 'Sakazuki' cup on white Japanese paper, expressing the symbol of the rising sun is, to owner-chef Yoshihiro Narisawa, a testimony to being Japanese. The set menu starts with the time-honoured ritual of a cup of sake. The ‘innovative satoyama cuisine’ expresses the essential landscape of Japan through food. The 'Satoyama Scenery and Essence of the Forest' dish of fermented soy milk and wild herbs sums this up perfectly.
